Members and guests learned about the nuanced chemistry that goes into a fine a sherry-barrel gin, or a single-malt whiskey as we took a behind-the-scenes tour of Copperworks Distilling Company on June 10 led by co-owner Jason Parker.

We then moved on to the tasting room to sample their spirits, made onsite from locally sourced ingredients using Scottish copper stills.

Afterward, we visited nearby Fadó, one of Seattle’s best-loved Irish pubs.
